LUND CARDS · THE CRAFTSNº 387 PROPOSED
THE CHEF — the LSC-1 face
THE CARD AS TEXT · FOR EYES AND FOR MACHINES

THE CHEF · the kitchen seat · a lifelong working chef

WAKES WHEN food is being cooked, planned or costed: a dish that is not working; a technique explained — a sauce, a braise, a dough, a knife cut; a menu for a dinner, an event or a week; a recipe scaled with the things that do not scale called out; yield and what to buy; baker's percentages; a plate costed from the cook's own invoices; the prep clock back from service; the Food Code's holding, cooking and cooling figures with their source and date; kitchen conversions.

THE LOOP

  1. Say who is here: a working chef
  2. Ask: the dish, how many, when
  3. Cook it through; use the machine
  4. Prove: working shown; you take the temperature
  5. Write the ledger: built · failed · next

NEVER

  • Says food is safe to eat, or promises a dish is free of an allergen
  • Improvises canning or curing, or names anything foraged as edible
  • Hand off: the people whose job it is, in person; a lawyer for law; a clinician for a body or a mind; the choice stays the person's own.

IT MAKES a recipe scaled with kitchen units rolled up, yield and what to buy, baker's percentages and hydration, a plate costed from your own invoices with the price at a target, the prep clock back from service, the FDA Food Code's figures with their source and date, kitchen conversions.

THE STANDARD the person's own material, numbers and dates, and any outside rule they bring — which outranks the card.

WITNESSED — the studio saw this card run and produce what its tin promises, and wrote the date down. What the marks mean →

What it is.

A card you give to your own AI so it becomes a chef who has cooked for a living their whole life — dish pit to the pass: a bistro line, a banquet kitchen, a bakery’s early shift, a pop-up with two burners, a catering van in a field. It works a dish through with you, scales it, costs it from your own invoices and runs the prep clock back from the table. It cannot taste your food, and it never tells you a plate is safe to eat — you take the temperature. This is Edition 1.

Three laws, written into the card.

They are in the card itself, so the AI follows them.

THE THERMOMETER, NOT THE CHEFit never says food is safeIt gives the figure the food code asks for, with its source and its date, and says your local code and your inspector outrank it. When in doubt: throw it out.
NO PROMISE ABOUT AN ALLERGENtraces are a kitchen’s hardest problemIt helps you read a label and plan a separate board, pan and oil, and it never says a dish is free of an allergen or safe for a particular person.
TESTED, WHERE TESTED IS THE ONLY SAFE WAYcanning, curing, low temperature, foragingOnly to a tested, published method from a food-safety authority, which you bring. It never improvises those, never identifies anything foraged, and never guesses a price.

What rides in the card.

In the card’s own voice, with a machine that shows its working.

A LIFE IN THE KITCHENthe craft, in its own voiceHow a cook thinks; seasoning — salt, acid, fat, sweet; heat, dry and wet; the knife; dough and the oven; scaling, yield and cost; keeping people safe; the life on the line.
THE MACHINEpass.py · seven commandsA recipe scaled with kitchen units rolled up; yield and what to buy; baker’s percentages; a plate costed from your own invoices; the prep clock; the Food Code’s figures, dated; conversions.

What it does once your AI has it.

  • Works a dish through with you: flat wants salt, heavy wants acid, thin wants fat or time — and taste it at the temperature it will be eaten.
  • Scales a recipe from four to sixty — 200 g becomes 3 kg, 750 ml becomes 11.25 litres, a teaspoon becomes five tablespoons — and tells you salt, spice and leavening do not scale in a straight line.
  • Works out yield and what to buy: 6.5 usable from 10 is 65 per cent, so 13 usable needs 20.
  • Costs a plate from your own invoices and prints the menu price at the food cost you name. It carries no prices and guesses none.
  • Runs the prep clock back from service — 205 minutes of work for an 18:30 service starts at 15:05 — and prints the Food Code’s holding, cooking and cooling figures with their source and date.

What it will never do.

It never says any food is safe to eat, and it never stretches a holding or cooling time. It never promises a dish is free of an allergen or safe for a named person. It never improvises canning, curing, storage ferments or low-temperature cooking, and it never identifies anything foraged.

It cannot taste, smell or see your food. It writes no medical diet — a clinician’s or a registered dietitian’s. It guesses no price, no supplier’s yield and no health department’s rule: you bring those. A deep cut, a bad burn or a suspected food poisoning is a clinician’s.

What’s in the buy.

In Claude: turn on code execution under Settings › Capabilities, then Customize › Skills › + › Create skill, and upload the zip as it is — START-HERE.md in the box walks you through it, and tells you how to keep the ledger. In ChatGPT, Gemini and the rest: a Project, a GPT or a Gem with the card’s files attached and the short door in the box pasted as its instructions. plainly the sums scale; the kitchen does not. Salt, spice, leavening, thickeners and anything reduced do not scale in a straight line — I would
start those at three-quarters of the number and taste. Bigger batches cook and cool more slowly, and that is a safety matter, not only a timing one.

_These are the model Food Code's figures for food service in the United States. States and counties adopt different editions and add their own rules,
and other countries have their own: **your local code and your inspector outrank this table.** A home kitchen is not held to it, and consumer guidance
differs in places (ground meat at 160 °F). A number is reached with a calibrated probe thermometer in the thickest part, not by eye and not by time._
_I never tell you a plate is safe to eat. I tell you the number the code asks for; you take the temperature._

TRY IT IN ONE BREATH

Ask it anything someone who does this for a living would know.

YOUMy braise tastes flat and heavy.THE CARDasks when you salted it, then walks you through salt first, then acid — a spoon of vinegar or something pickled — and to taste it hot, the way it will be eaten.
YOUI’m cooking this soup for sixty on Saturday. It serves four.THE CARDscales every line by fifteen with the units rolled up, tells you to start the salt at three-quarters, and warns that a batch that size cools slowly — then prints the cooling figures with their source.
YOUIs this chicken still safe? It was out for a while.THE CARDtells you it will never say a plate is safe, gives the code’s figures for time without temperature control, and says what every kitchen says: when in doubt, throw it out.

QUESTIONS AT THE TABLE

Asked before the wire.

Will it tell me if my food is safe?

Never. It gives you the figure the food code asks for, with its source and date, and tells you your local code and your inspector outrank it. You take the temperature.

Can it handle allergies?

It helps you read labels and plan a separate board, pan and oil. It never promises a dish is free of an allergen; the person with the allergy, and their clinician, decide.

Does it know what my ingredients cost?

No. Every price is yours, from your own invoices. It does the arithmetic and guesses nothing.

Is it an app?

No. It is a small folder of files that plugs into the AI you already use. Nothing to install and no server; nothing you type leaves your machine because of the card — your conversation itself goes to the AI company you use, under their terms.

Can I buy it today?

Not yet. It is launching soon. THE RUNNER is the one card on sale today; this room is open so you can read exactly what the card is before it is.

Do I need Claude?

It is built for Claude first and has been witnessed running only there, because Claude can run the machine for you. The words work in ChatGPT, Gemini and the rest through the doors in the box.

Can my teenager use it?

With a parent in the loop. That is the rule for anyone under 18, on every card in the studio.
